Sheet Pan with Mixed Potatoes & Sausages

Save time by keeping the peel on the potatoes (but scrub them well before you chop them into cubes).
Note: I recommend Extra Virgin Olive Oil or Grapeseed Oil because I don't use any other type of oil. Grapeseed Oil has a lower smoke point that Olive Oil. I also recommend a good quality salt. I never use Table Salt. In this recipe, I've used Mediterranean Sea Salt.
